I think I eat more quinoa than the average person.
I love quinoa. It’s the perfect little baby seed-grain thing. It’s full of protein and wonderful for us veggies. It’s also gluten-free, if you’re into that whole thing. Quinoa is super versatile but, sadly, I am almost out. So, due to the fact that I will be home in three weeks, I am going to have to switch to couscous.
I also have wheatberries. Does anyone even know what those are? Or what you’re supposed to do with them? Because I have no idea. They have been sitting in my pantry for months. Months! That’s gross. Good thing it doesn’t go bad… right?
Anyway, get pumped for some couscous and wheatberry recipes in the near future. In the meantime, here are some grainy, healthy, cheesy quinoa bites that are great for a fast meal.
And the best part is you can clean the kitchen while it’s cooking. Then, after the meal, you can dash off to get cookies ‘n’ cream frozen yogurt at the local yogurt shop for dessert. Just like I did.
Cheesy Quinoa Bites
Adapted slightly from So Very Blessed
1 c cooked quinoa
1/2 c finely chopped carrots
1/4 onion, chopped finely
1 clove garlic, minced
1/8 c fresh herbs, chopped
1/4 c grated parmesan cheese
1 tbsp flour
Lemon juice (optional, to use after baked)
1. Preheat oven to 350°F.
2. Mix together ingredients.
3. Scoop evenly into greased muffin tin.
4. Bake for 20 minutes.
5. Sprinkle extra cheese on top and squirt lemon juice, if desired.
