I love pasta salad. It’s so summery and light! And after all these hot days, it is perfect to come home to because it’s already made and it’s nice and chilly and sweet and crunchy and delicious.
This pasta salad is a mezcla of lots of things I needed to use up in my refrigerator. A mezcla is a mix, if you didn’t know. It’s one of my favorite words in Spanish.
Anyway, this pasta salad is totally versatile. Like bacon? Add it! Want a little dijon mustard? Put it in there! Don’t like broccoli? Me neither. Leave it out! I just had a total brain fart moment and decided to buy broccoli. Don’t ask. I don’t know either. Allergic to nuts? Definitely leave those out.
This is your salad, this is your summer (soon..), this is your 2012. Make it memorable. Make it delicious.
Also, please notice the cat pasta. Yes, that is cat-shaped pasta. Yes, I loved every minute of it. Remember Spongebob-shaped macaroni and cheese? Those were the days.
Summer Pasta Salad
Red wine vinegar
Add all. I know there aren’t certain amounts, but just play it by taste. If you want more mayo, add it! If you don’t like red wine vinegar, leave it out. Whatever feels good to you.
