Sesame Soy Baked Tofu

You know how you become obsessed with songs?

Especially when they first come out and haven’t been overplayed yet and you flip through the radio stations hoping that song will come on and when it does, it’s game on. Full on jam mode with song blasting, head banging, and singing at the top of your lungs?

Yep. That song for me right now is Carrie Underwood’s Good Girl. Seriously, I’m in love. Carrie is so hardcore and intense and she’s a vegetarian. I mean, hello! Love her.

So, if you see some crazy girl driving around with Carrie blasting through the rolled down windows with this fantastic 75° weather, that’s me. Pay no mind.



Sesame Soy Baked Tofu
Adapted slightly from Fresh 365 Online

1 package cubed tofu, drained and pressed
2  tbsp soy sauce
1 tsp sesame oil
2 tsp red pepper flakes
1 tsp garlic powder

Kale

1. Combine all ingredients and bake at 500°F on a baking sheet for 20-25 minutes, stirring every 5-10 minutes.
2. For kale, chop into pieces, bake with the tofu for about 3-5 minutes, watching, and when the edges start to get crispy, take out the kale pieces and continue to bake the tofu.
