Peanut Butter Buttermilk Pancakes

You know how I do these crazy weird workouts? Well, if you don’t, I do these crazy weird workouts. They’re really intense and make me look like I have way too much testosterone and I walk around the gym and do weird things like jump on boxes and handstand pushups.

Well, the guy who leads these super, crazy, intense workouts has decided that this week is going to be Bench Press Competition week. Apparently there is a bench press competition coming up soon with our Campus Rec and he wants us all to do it.

I’m pretty sure I am one of about 5 girls in the entire school who bench presses. And I am not about to sign up for some competition with a bunch of sweaty dudes in compression shirts.

Instead, I just want to make and eat lots of pancakes. Lots of bench pressing = lots of wiggle room for pancakes, right?

And speaking of pancakes, it is still Lent. Yes, I am aware. Pancakes flirt with the line of sweets. I believe that if made correctly, pancakes can be healthy and not desserty. So, these pancakes are healthy (except the buttermilk but I needed to use it up from the Red Velvet Pancakes before it spoiled) and I added applesauce, bananas and cinnamon on top instead of syrup. Totally inventive and healthy.
