Avocado Egg Salad

True Life: I’m Addicted.

Now, some people have additions to cocaine or marijuana or shoes or shopping or gambling or caffeine.

I, however, am addicted to peanut butter, Nutella, hot tea and oatmeal. I’m pretty sure I eat more peanut butter than the average individual. And I’m pretty sure my roommate thinks I’m a bit strange because of it. We save lids and recycle them after they start to pile up, and one time there were two peanut butter lids in the jar. Now, this jar is not very big. I was probably averaging a jar of peanut butter a week.

Hey. At least I won’t be a lazy vegetarian because I’ll have plenty of energy. And I won’t die of a drug overdose or running out of money from gambling. Maybe from peanut butter, but peanut butter is still cheaper than losing at poker.

What are you addicted to? Come on, people. Let’s be real here. We’re all friends.

Avocado Egg Salad

2 eggs, hardboiled and diced
1/2 avocado, chopped
1/8 c yogurt (I don’t know – feel it out. If you want more moisture, add more)
1-2 tsp dijon mustard
1/4 onion, chopped,
Salt, pepper, dried dill and red pepper flakes.

Combine. Serve with walnuts and over spinach.
