Today is Valentine’s Day.
My roommate says that Valentine’s Day is not just about boys and lovers. It’s about love in general.
I think it’s just a great excuse to eat chocolate and make Red Velvet Pancakes.
I also have 165 Valentines this year because I’m making every single resident at the nursing home my Valentine. Our apartment has turned into a Valentine workshop. I made over 40 in one night.
I think between the cupcakes and the myriad of Valentines, this is going to be a good day. Also having a cute boy as a Valentine helps…

Red Velvet Pancakes
Adapted slightly from That’s So Yummy
2 c flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
6 tbsp sugar
4 tbsp cocoa powder
1 1/2 cups buttermilk
1/2 c sour cream
Red food coloring
3 tsp vanilla extract
1/2 c chocolate chips
1. Combine dry except chocolate chips.
2. Combine wet and food coloring.
3. Add wet to dry.
4. Mix, and stir in chocolate chips.
5. Make pancakes!
