Balsamic Vegetable Stir Fry

Something very crazy is happening.

I. Like. Teen. Mom.

There. I said it. I sometimes try to resist things that the rest of the population likes, like Taylor Swift, Adele and Teen Mom 2. I always give in, though [except for SmartPhones. Staying strong with my little flip phone].

Welllllllll, when I went home for Christmas break, all my coworkers watch Teen Mom and were spitting out information about how Adam is mean and Jenelle’s mom looks and talks just like one of our customers and all this crazy stuff.

So, I tried it out for myself. I watched Teen Mom 2. Then, I proceeded to call Aleeah’s, or whichever baby has the eye problem, eye condition a “smaller fiber optic nerve.”

Good thing I don’t want to be a doctor.

Balsamic Vegetable Stir Fry

1/2 cup brown rice
Shredded carrots
Shelled edamame
Chopped green bell pepper
Spices
Scallions
Balsamic vinegar
Chardonnay

1. Pour a little balsamic vinegar in the bottom of the pan.
2. Cook the green pepper in the bottom of the pan and be sure to shake the pan often so that it cooks evenly.
3. Add more vegetables and some white wine. When the liquid gets really low, add a little more wine or some water.
4. When the vegetables are cooked through, add the brown rice. Toss until cooked through.
5. Serve warm with spices.
