Stuffed Peppers

My best friend and I had this dream of going to culinary school for a really long time. Heck, let’s be real. We still have that dream. Instead, we went to college and decided to commit social suicide by taking hard majors and focusing on the real world.

She makes things like “Chocolate-Glazed Beef Medallions” and “Stuffed Tomatoes” and “Mocha Chocolate Cupcakes with Buttercream Frosting” and really crazy, culinary-school foods that I only dream about making. Except the beef, obviously.

So, today I decided to make stuffed peppers. I wanted to knock it off my list, as well as use up old peppers. Would you believe I haven’t gone to the grocery store in almost two weeks? What the heck do I eat?

Stuffed Peppers

Bell pepper
Brown rice
Black beans
Scallions
Tomatoes
Dried parsley
Black pepper
Lime juice
Red pepper flakes

1. Remove stem and seeds from bell pepper.
2. Put pepper in microwave, covered in Saran wrap with slits, for 3-4 minutes.
3. Add desired amount of filling ingredients.
4. Fill bell pepper with filling.
