I’m in a funk. You know when you’re in a funk that you just can’t shake? No matter how many episodes of Sex and the City you watch or how many giant marshmallows you eat or how many motivational quotes and sayings from Pinterest you read, it remains.
And this rain? Doesn’t help.
But, at least you can cancel out those marshmallow calories by eating some of this salad.
Eating cucumbers burns more calories than they actually have, right? Or wait… is that celery?
Either way, this salad kind of tastes like summer. It has dill – win! – and cucumbers and onions. It reminds you of when times were simpler and there weren’t things like school and stress and surgeries and research and graduate school applications and the only concerns you had were, “When am I going to go to the pool?” and “What Nicholas Sparks book should I read next?”
Dill Cucumber and Onion Salad

Cucumbers, sliced thinly
1 1/2 tsp salt
1 tbsp + 1 tsp red wine vinegar
1 tsp sugar
2 tsp dried dill
