Lime Quinoa with Black Beans and Kale

Oh hey, Thursday.
You snuck up on me. I wasn’t expecting you. You know.. actually, I really wish you would go away because I have a test today. Friday’s coming over soon. I’m excited. That means I get to go put furniture in my apartment.
So, let’s get to the point. How about I tell you, politely of course, to leave and then you just pretend this conversation never happened. I think we’d all be happier. You’d like a day off, right? Right.
Well, Thursday, now that we’re on the same page.

Lime Quinoa with Black Beans and Kale
Adapted from
1/2 cup quinoa, uncooked
1 cup water
1/2 tbsp vegetable oil
1 garlic clove, minced
1/2 cup onion, chopped
1/2 red bell pepper, chopped
1/2 cup black beans, drained and rinsed
1/2 tsp cumin
1/2 tsp cayenne pepper
1/2 tsp curry
Lime juice
Black pepper and salt
3 kale leaves, taken off stems and chopped
1 tomato, chopped
1. Cook the quinoa according to directions.
2. Cook the garlic in the oil over medium heat. Add the onions and peppers and cook for about five minutes, until tender.
3. Add the beans, spices, lime juice, and pepper and cook on medium heat until heated through.
4. Cook down the kale a little and add to bean mixture. Add tomatoes. Put over quinoa. Eat warm.
