Veggie Couscous

Babies cause so many problems. Callie and Arizona. Cristina and Hunt. Meredith and Derek. Poor Meredith.

On a lighter note, I made veggie couscous. My dad hated it. Okay, he didn’t hate it but he didn’t eat all of it. And he usually eats everything on his plate.

My poor future husband will probably think my cooking is too veggie-friendly and girly and the whole baby issue won’t even be an issue because we’ll be so focused on the fight over food. I will not be cooking meat. Ever.

Veggie Couscous
Adapted from Healthy Family Meals

3/4 cup uncooked couscous
1/2 cup frozen green peas
1 cup vegetable broth
1 zucchini, chopped
1 yellow squash, chopped
1 bell pepper, chopped
Lime
Cilantro bunch, chopped
Olive oil
Salt and pepper

1. Cook the couscous according to the directions, using vegetable broth and adding the frozen peas. Set aside.
2. Sautee the zucchini, squash and bell pepper with a little olive oil until tender but still slightly crunchy. Season with salt and pepper.
3. Add the couscous and vegetables. Squirt lime juice and add cilantro. Serve warm or cold.
