Southwestern Pasta Salad

You know what I think of when I hear the word summer?

I think… Cilantro. Lime. Margaritas. Mojitos. Mint. Peaches. Lemonade. Watermelon.

Okay, so I think of a lot of things. But I have been on a cilantro and lime kick lately.

Do it. Jump on the bandwagon. Totally worth it. Fresh. Delicious. Summery.

Southwestern Pasta Salad
Adapted from

1 box rotini
1/3 cup vegetable oil
1/4 cup lime juice and zest from limes
2 tablespoons chili powder
2 teaspoons ground cumin
2 cloves garlic, crushed
1 cup corn
1 cup black beans, drained and rinsed
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
Bunch of cilantro, chopped
Salt and pepper to taste

1. Cook the rotini according to the directions.
2. Add the oil, lime, chili, cumin, and garlic and whisk together in large bowl.
3. Add the pasta to the dressing and mix well.
4. Add the vegetables and cilantro. Season with salt and pepper. Serve cold.
