Sometimes I have emotional breakdowns because of stupid boys and how messed up the universe is and I do what those self-help books and Oprah and dietitians across the world warn us not to do: stress eat.
Last night I ate some of this.
Today, my head is much clearer – why does that always happen in the light of day? – and I decided to make a healthy, summer salad.

In this recipe, there is delicious corn, black beans, tomatoes, lime juice, and cilantro. All healthy. All girly. All summery. All sane.

Black Bean, Tomato, and Corn Summer Salad
15 oz can black beans
15 oz can corn (or frozen corn – I used frozen)
Salt and pepper
Combine all the ingredients. Drizzle olive oil. Chop a handful of cilantro and squirt lime juice. Season with salt and pepper. Easy. Delicious. Enjoy.
